Ingredients:
Bottom layer:
1 stick of butter (1/2 cup)
1/2 cup sugar
6 TB unsweetened cocoa powder
1-3/4 cups crushed graham crackers
1 tsp vanilla extract
Middle layer:
1 package (5.1 oz.) instant vanilla pudding mix
3-1/2 cups cold evaporated milk
Top layer:
4 TB butter
6 oz. semisweet chocolate chips
Directions:
Preheat oven to 350 degrees F. Grease and flour an 8" x 8" pan.
For the bottom layer, melt the butter in a microwave-safe bowl. Stir in the sugar, cocoa powder and vanilla until combined. Stir in the crushed graham crackers and mix thoroughly. Press this mixture evenly into the prepared pan. Bake for 13 minutes. Remove from oven and let cool on cooling rack for 10 minutes. Place in fridge until the crust is chilled.
For the middle layer, beat the vanilla pudding mix with the cold evaporated milk for 2 minutes. Pour over the chilled crust and spread evenly. Place in the fridge for 1 hour to allow the pudding to set.
For the top, melt the chocolate and butter together in the top of a double boiler or in the microwave, stirring frequently. Allow the melted chocolate to cool down for about 5 minutes and then spread it evenly over the pudding layer.
Chill in the fridge for at least an hour or longer if you have the time. (The longer the bars chill the better they taste!) Cut carefully into bars and serve.
